Mysore pak


Bengal Gram flour -1cup

Sugar -1cup

Water-3tbsp

Melted unsalted butter-1cup


Combine sugar and water and boil for 5 mins.

Pour the melted butter when the mixture bubbles,Add flour and cook stirring for 5 min

Stir until the mixture leaves the side of the skillet

Pour into a greased tray

Cut into squares and serve when it is cold

Chicken Drum sticks in Spicy Sauce


Chicken drum sticks - 1/2kg

Cooking oil-1tbsp

Garlic -5 segment

Onions -2 sliced

Soy sauce -1tbsp

Vinegar -1tbsp

Pepper -1 tbsp

Sugar -A pinch

Salt - to taste


Put Garlic and onions in hot oil. Stir until golden brown.

Add chicken and salt,Simmer for 5 min

Stir chicken until brown. Add water (1/2)cup soy sauce, vinegar, pepper and sugar. Cook for another 8-10 min


Beef fry


Beef - 1kg


Chili Powder -1tbsp


Coriander Powder -1tbsp


Vinegar -1tbsp


Garam Masala -1tbsp


Turmeric Powder -1/2tbsp


Ginger-small piece


Salt -to taste




Add chili powder , coriander powder, vinegar, gar am masala, turmeric powder, ginger and salt to beef cubes. Marinate for 10 min. Add 3 tbsp of water and cook in a pressure cooker for 10-15 Min's. The meat should be dry.Cook for few more minutes without pressure if the cooked meat is not dry. Heat oil in a Teflon coated pan and saute garlic and curry leaves.Add cooked beef and ground pepper fry on a low flame until the meat turns light brown. Serve with rice

Stuffed Paratha


For Stuffing:

Beans - 5-6 nos

Carrot - 1/2

Potato(small) - 1 no

Green Chillies - 2 nos

Garam Masala - 1/2 tsp

Salt - As reqd

For making paratha:

Maida/Wheat flour - 1 cup

Oil - 3 tspSalt - 1 tsp

Milk - 2 tbsp


Chop all vegetables.
Cook all vegetables with little water

Mash the vegetables using your hands
Mix salt and garam masala powder with the mashed vegetables.
Knead the flour with oil, salt, and desired amount of water to make a dough(just like chapathi dough).
Make small balls out of the dough and pat it with hand to make it a little bigger.
Place a small lemon size stuffing in it`s middle and close it.
Roll out, smear ghee and put it on the tawa.
Cook till both sides are done.

This is a good healthy dish

Fish Molly


Any fish -2 lbs
Tomato -2 nos
Onion -1 big
Garlic - 5 cloves(minced)
Turmeric powder- 1/4 tsp

Crushed pepper -2tbp
Green chilly -5 nos
Coconut milk- 1 cup(thick)
Salt -to taste,
Lemon juice -3 tsp
Curry leaves -2 stems
Ginger -1 inch piece(minced)
Oil -2 tbp


Heat the oil in a pan and sauté the onion and green chilies for five minutes.

Then add the crushed pepper, garlic and ginger.

Fry until the smell of chili comes out.

Add the coconut milk, turmeric powder and let it boil. Then add the fish and salt.

Cook well and add the tomato pieces. Cook for 5 minutes. Add the lemon juice and curry leaves.

You can eat it with chapati or bread as you wish.

Coriander Chutney


Fresh Coriander Leaves -1 cups

Green Chillies - 2

Lemon Juice -1 tsp

Salt - to taste

Small Onion -2

Ground Pepper -1/4 tsp


Blend all the ingredients and make a paste


Note: The paste is good to make sandwiches

Grated Coconut Fish


Fish-1/4kg

Minced Onions -1/2cup

Green Chillies-6(minced)

Turmeric-1/2tsp

Ginger -1/2tb

Garlic -2 segment(minced)

Vegetable oil -1 tbsp

Curry leaves -12

Chilli powder -1/2tsp

Coconut-2 cups(grated and crushed)

Kudampuli -6 small pieces


Mix all the ingredients in a casserole add 2 1/2 cups of water and cook in high flame until the mix boils and then on low flame until the mix becomes dry.A good side dish for rice

Caramel Custard


Sugar - 1cup

Eggs -4

Milk -2cups (boiled and cooled)

Vanilla - 1/2 tsp


To make caramel , take 1/2 cup sugar in a sauce pan and melt it on a low flame and stir until it caramelises(caramel colour)

Remove from flame and pour it into small tray or mould to cool

Beat eggs and remaining sugar until the mix is smooth

Add milk and vanilla and stir for another 5 min

Pour on top of the caramel and bake at 325 F ,for 30-35 min.Serve cold

Vattayappam


Raw Rice Flour-500g

Fresh Grated Coconut -2 cup

Yeast -1 tsp

Brown Sugar or Sarkara syrup -1/4 cup

Cumin powder-1tsp

Salt-to taste

Raisins -1/4 cup


Take 2 table spoons of flour, mix with 2 cups of water and boil.

Stir until it becomes tick. Set a side

Grind coconut well. Mix with flour, coconut,yeast, brown sugar and the boiled flour porridge and keep at room temperature for 5 hrs(in cold climate the mix needs longer time to rise)

When the mixture rises add salt and cumin powder. Stir well

Add water if necessary

The mixture should be ticker than pancake batter.

Pour into round steel plates and steam until the appam is cooked well. Steam for 15-20 mins








Easy Lace Appam (Palappam)



Raw Rice Flour-3 cups


Grated Coconut -2 cup or 1/2 can of coconut milk


Sugar-2 tbsp


Yeast-1 tsp


Salt-to taste




Coconut milk mix with rice flour,sugar,yeast ( soaked in two table spoon of hot water)


Keep a room temperature for 5-8 hrs


Add water if necessary to make tha batter thin. Salt to taste

Coconut Rice


Basmati Rice -1 cup

Water -2 cup

Coconut milk-1cup

Salt- to taste

Onion-1(minced)

Butter-1 tbsp


Boil water. Cook rice in it for 5 min.

Add coconut Milk and salt and cook until the rice becomes dry

Heat butter season with minced onion and mustard seeds

Egg Sandwich


Bread Slices-6

Eggs-2

Onion-1(chopped)

Green Chillies-1

Ginger-1/2 chopped

Garlic-2 segment

Tomato-1

Cilantro leaves-1/2 cup

Cooking Oil-1 tabel spoon

Salt and Ground Pepper-to taste


Heat cooking oil.Saute all the ingredients, except eggs

Beat the eggs well.Mix with souted ingredients

Add salt and pepper, cover and cook under very slow flame untill all the water evaporates.

Spread Mayonnaise on 3 slices.Place 2 Table spoon of egg mix on one slice and cover the slice with myonnaise.Cut diagonally
